Where do you source your produce from?
‘’I get most things from Castries market, which is always a memorable experience of sights, sounds and smells. Colourfully dressed ladies from outlying villages, heads often wrapped in African twirls, come to sell their variety of produce. There’s row after row of every imaginable fruit, herb, spice and vegetable. I also have a farmer who forages the countryside for me, so you can imagine how my daily changing menu is always so fresh and local.’’
What is your favourite dish to prepare?
‘’Lobster for its texture, bright colours and fl avour. I use the lobster to make a ravioli dish, which has a lot of technical skill and utilizes a lot of the island spices & aromats. Making the pasta and moulding it into the perfect ravioli, just getting very physical with the food - can’t get better than that.’’
You were voted Caribbean Chef of the Year for 2016. What brought you to Cap Maison?
‘’I’ve been at Cap Maison nearly nine years. In my fi rst job I fell in love with the buzz, the vibe and the energy from the kitchen. I went on to work at numerous Relais&Chateaux properties with a total of 13 Michelin-stars between them. At 24 I became Head Chef of a Michelin star hotel and at 25 was awarded a Michelin Red M. My restless energy brought me to the Caribbean, where I was named Saint Lucian Chef of the Year for 4 years in a row; the only chef to receive this accolade in the Caribbean. Now at Cap Maison my food is evolving with the natural textures, colours and culture of Saint Lucia, which provide me with a rich source of inspiration.’’

‘’There have been so many highlights to my Saint Lucia holiday, I’m not sure where to begin! The scenery from my beautiful suite is simply stunning; I could gaze out at the gorgeous bay all day long and never grow bored. Our three - bedroom suite is perfect, with plenty of space, and I’ve become so attached to my glorious private balcony. I’ve been dipping into my hot tub first thing every morning, watching as the island comes to life, and then sinking into it again in the evening with a cocktail and enjoying the amazing Caribbean sunset – life doesn’t get much more idyllic than this!
I’ve hardly left the fabulous infinity pools all week - the floating loungers are just too inviting! And it’s so easy taking the ferry over to LaBas Beach for a chilled out day on the sand. They’ve recently restored the beach, so it’s completely paradisaical – soft, glisteningly white and impossibly picturesque. If I would recommend just one thing you have to do at Marigot Bay, it would be the rum tasting at the Rum Cave – it was the most fun evening and we did a course with every type of rum which was
delicious!
On my birthday the hotel arranged an amazing private dinner in the Treehouse - the menu and food were fi rst-class. I certainly won’t be forgetting such an atmospheric birthday celebration! Every meal has been full of island flavour, fresh sushi at The Brut
Bar being my absolute favourite. We are even being constantly surprised by the amazing staff by the pool, who bring little treats to our loungers, like fresh fruit smoothies and caramelised popcorn lollipops – you can see the children all love it!
The ‘Personal Assistants’ helped us book loads of adventures; scuba diving was incredible, visiting the rainforest on quad bikes was defi nitely the most exciting day, and hiking the Pitons was one of the most spectacular hikes I think I will ever do. They really made sure we experienced the very best of Saint Lucia. I haven’t had to lift a finger since I touched down, but my most indulgent day was in the Auriga Spa – it’s an open-air oasis of calm and I fell into complete Zen-mode during my massage as I looked out to the tropical greenery all around – so relaxing!"
